Christmas Cooking: Chocolate Truffles

Meow, so I was going to do videos about this but these are going to take time and I genuinely don't have the time and space to do it any time soon.. I shall be doing a video on making Spicy Malagueta Chicken for Cabana at some point in early 2015 unless I have free time within the next 2 weeks. So, instead I am going to do some recipes on what I love to cook at Christmas. This one is mainly a substitute for a present.

So the first festive post is going to be Chocolate Truffles. Why? Its easy, no fuss, very contemporary and can be very versatile. It can be an amuse bouche or a dessert or a snack or a present... It can be flavoured with anything and everything and only takes 2 ingredients to make it so it is great to start off with within this festive season.

Ingredients:
  • 100g Dark Chocolate (70% Cocoa Solids at least)
  • 100ml Double Cream
  • 50g Butter
Method:
  • First of all, unwrap your bar of chocolate. I have used a 70% Fairtrade bar as it helps workers in a third world country and does what I need it to do. The reason why it has to be 70% cocoa solids because you are melting it down and adding double cream which is sweet which dilutes the chocolate and then later on you may be using flavours on top eg chilli or orange or whatever.
  • Break up the chocolate bar into little chunks as it basically shows you within the bar then put into a microwavable/glass bowl.
  • Pour the cream and butter into a pan and put it onto the hob and heat until just warm.. (around 40C if using a food probe.)
  • As soon as its just warm.. Just wants to be simmering. Pour the cream over the chocolate. Mix once and then leave until it becomes one liquid texture.
  • Put in the fridge and wait until it is set and firm
  • Use a melon baller or coat your hands in vegetable oil (can be messy...)
  • Roll between hands
  • Cover in a topping (coconut, cocoa powder etc) or sprinkle things such as sea salt or chilli powder on top then put back in the fridge to firm.
These beauties can be eaten as a snack or you can put them on a plate and share them with friends. If you want to give them as presents, you can put them in little muffin cases then put them in a box and tie with ribbon.
These are the epitomy of Christmas as they are sold at Christmas at markets.
